Friday nights are perfect for one pot meals since after a long week, it’s nice to just be able to throw things together in one pot for a hearty dinner. We love pho and last week, I decided to try making it at home from a recipe I had found in a vegetarian magazine I was flipping through at a friend’s house. I had snapped a pic of the recipe awhile ago and finally decided to try it out. It came out just perfect- it tasted like the authentic little pho shop we get it from when we crave it.
